Mediterranean White Bean and Tuna Salad Toasts A quick and healthy lunch idea! Ingredients 1 5- ounce can albacore tuna in water or oil , drained well 1 cup white beans , if using canned, rinse well and drain ½ cup extra virgin olive oil 1 clove garlic , minced Zest of 1 lemon 2 tablespoons fresh lemon juice 2 tablespoons thinly sliced red onion 2 tablespoons minced fresh rosemary ½ teaspoon kosher salt ½ teaspoon freshly ground black pepper 4 slices sourdough bread Directions - Drain the tuna well. In a medium bowl, combine the chunk white tuna with the beans, olive oil, garlic, lemon zest, lemon juice, red onion, rosemary, salt and pepper. Mix well and let sit for 10 minutes up to overnight for flavors to meld. - Toast the sourdough toasts until golden brown and divide the tuna among the toasts.
